Kenneth Aguillera (1947–2024) was born in Santa Cruz, Trinidad, and proudly served as a detective in the Trinidad and Tobago Police Service for 15 years. Father, Grandfather and passionate cook, he shared his love for Trinidadian culture and cuisine through storytelling and food. His legacy continues through his daughters, Allison and Sade, grandchildren, Joshua and Helen as well as his beloved cookbook To Trinidad & Tobago…with Love.

We dedicate this book to our father and grandfather, Kenneth Aguillera, who painstakingly—yet lovingly—poured time and energy into assembling these recipes from his childhood through adulthood. He was a proud Trinidadian who loved his country. Although he did not have the opportunity to see his book published, we found great joy in fulfilling and completing what he had so carefully compiled—to bring his vision to life.
